Easy Lasagna- and healthy, too!

So I neglected to post on important recent events like Christmas, New Years, and my b-day, but I am going to have to post about what I made for dinner tonight.  Check it out...




So, in addition to being very delicious, it actually was much healthier than traditional lasagna.  If you want to try, let me know how you and your family liked it.

~1lb ground turkey (brown with a dash of black pepper and garlic salt)
whole grain lasagna noodles, uncooked (I used Kroger-brand)
1 jar pasta sauce
small container low fat ricotta
1 egg
box frozen spinach, thawed
~1/2 cup mozzarella shredded cheese
~1/4 cup Parmesan shredded cheese

Prepare ground turkey.  Mix with pasta sauce one fully cooked.  In a bowl, mix egg, spinach, and ricotta cheese together.  Layer pasta, uncooked noodles, ricotta mixture, and mozzarella cheese as desired in your baking dish.  I only did 2 layers of noodles because I was running low but the spinach adds a good volume to the dish.  The last layer should end with mozzarella and then top dish with shredded Parmesan cheese.  Cover with foil and bake at 375 for ~30-35 minutes then uncover and bake for another 10 minutes.  Enjoy!
